Stuffed Pork Loin with Sun-Dried Tomatoes and Feta





Serves 4
Ingredients:
| 1 lb pork loin fillets, pounded out in an 8-inch square |
| 1 cup chopped red onion |
| 4 cloves fresh garlic |
| 2 cups sun-dried tomatoes, rehydrated in hot water |
| 1 cup crumbled feta cheese |
| 2 tablespoons chopped fresh rosemary |
| 1/4 cup lemon juice |
| 1/4 cup olive oil |
| Salt, to taste |
| 2 tablespoons olive oil |
| Pepper, to taste |
Directions:
- Combine onion, garlic, tomatoes, lemon juice and 1/4 cup oil in food processor; blend until semi-chunky. Remove and add feta, salt, pepper and rosemary by hand and set aside.
- Spread 3/4 cup of this mixture on the pounded out pork, leaving room at the edge. Roll up and insert toothpicks to hold seam. Place in pan, seam side down, until ready to cook. Heat 2 tablespoons olive oil in saute pan on medium heat. Add pork roll to pan. Season with salt and pepper and sear all sides until browned. Place entire pan in oven at 350 degrees F and finish cooking for an additional 10-15 minutes.
- Remove from oven and let meat rest 1-2 minutes before cutting. Serve immediately.
