Italian Tomato Salsa for Grilled Chicken

Serves 4


Ingredients:

3 medium vine-on tomatoes, seeded & chopped
1 clove garlic, minced
1 shallot, minced
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
1/4 cup chopped fresh basil and/or Italian parsley
Salt, to taste
Pepper, to taste

Directions:

  1. Combine all ingredients in bowl. Let sit at room temperature for up to an hour before serving.
  2. Great on crostini, grilled meats or corn chips!
