Ingredients:
| 1 lb fresh green beans, blanched |
| 1 shallot, minced |
| 2 cloves garlic, minced |
| 2 teaspoon Dijon mustard |
| 1 teaspoon sugar |
| 1/4 cup rice vinegar |
| 1/4 cup olive oil, plus 2 tablespoons |
| 1 tablespoon fresh thyme |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Toss all ingredients except beans in mixing bowl and let set 20 minutes.
- Blanch green beans in boiling salted water for up to 5 minutes, shock in a bowl of ice water. Drain and toss with vinaigrette mixture.
- Serve warm or cold.
