Ingredients:
| 1 small baguette or crusty bread |
| 1/4 cup olive oil, plus 2 tablespoons |
| 1/4 cup red or white wine vinegar |
| 1/4 red onion, sliced thin |
| 1 clove garlic, minced |
| 3 cups chopped fresh tomatoes |
| 1/4 cup crumbled Feta cheese |
| 1/4 cup fresh basil or parsley |
| 1/4 cup kalamata olives, halved (optional) |
Directions:
- Cut baguette in half the long way, brush lightly with 1 Tbsp. oil and place oil side down on hot grill or under broiler. Let it get charred slightly, remove and cut into 1-inch chunks.
- In a bowl combine the next 8 ingredients, including the rest of the olive oil and mash lightly. Combine with the bread chunks and toss. Let sit a few minutes (15-20) before serving to let bread soak up the yummy juices.
