Green Beans with Caramelized Shallots





Serves 4
Ingredients:
| 4 tablespoons olive oil |
| 2 large shallots, or 4 small, sliced thin |
| 1 lb bag green beans |
| 1/4 cup gratedparmesan cheese |
| 2 tablespoons unsalted butter |
| 1 teaspoon Salt, more to taste |
| Pepper, to taste |
Directions:
- Fill a saucepan halfway with water, bring to boil & add 1 teaspoon salt. Add beans and cook for 2 minutes. Drain and place in bowl of ice water to stop cooking, drain well & set aside.
- Add oil in large skillet on med-high heat. When hot, add shallots & caramelize, about 5 minutes. Then add beans, butter, salt & pepper, and parmesan. Toss well & turn off heat. Serve immediately.
