Rembrandt Cheese Salad
Serves 6

Ingredients:
| 7 oz Rembrandt cheese, cut into cubes |
| 2 melons, cut into cubes |
| 1 apple, cut into cubes |
| 7 oz ham, cut into small strips |
| 2 peeled hard-boiled eggs, finely chopped |
| 2 tablespoons chopped walnuts |
| 2 tablespoons light mayonnaise |
| 1 tablespoon ketchup |
| 1 tablespoon dry sherry |
| Salt, to taste |
| Pepper, to taste |
| Parsley, finely chopped |
| Lettuce leaves |
| Paprika, to taste |
Directions:
- Put the cheese, melon cubes, apple cubes, strips of ham, chopped eggs and walnuts into a bowl.
- Stir the light mayonnaise, ketchup, sherry, salt, pepper and paprika in a small bowl until you get a smooth sauce. Pour this sauce over the salad and mix it carefully.
- Serve this salad on plates and garnish with lettuce and parsley.
