Tuscan Orzo Pasta Salad

Serves 4


Ingredients:

1 cup dry orzo pasta
2 tablespoons olive oil
1 tablespoon lemon zest
2 tablespoons toasted pinenuts

Directions:

  1. Cook pasta according to instructions on box in salted water; drain, rinse under cold water, add olive oil and toss to coat.
  2. Add Tomato Cucumber Salad and lemon zest.
  3. Sprinkle toasted pinenuts just before serving.
