1 package Italian sausage links, cut into bias chunks
1 red bell pepper, julienne cut
1 green bell pepper, julienne cut
1 red onion, julienne cut
2 tablespoons olive oil
1 package Italian herb blend, chopped
1 jar Marinara sauce
8 oz grated white cheddar cheese
8 oz grated provolone cheese
2 sub rolls, halved
Directions:
On medium high heat, heat olive oil and saute sausage until lightly browned. Add all veggies to the pan, toss and let caramelize.
Sprinkle cheese onto both sides of sub rolls, toast in the oven at 350 degrees until cheese melts. Top with sausage and pepper mixture and fresh herbs. Press both sides together and serve with warm marinara sauce.
