Cranberry Horseradish Sauce





Serves 2 cups
Ingredients:
| 2 tablespoons olive oil |
| 1/2 cup diced red onion |
| 1 cup dried cranberries |
| 1/2 cup cranberry juice |
| 1/2 cup champagne vinegar |
| 2 tablespoons horseradish |
| 2 tablespoons honey |
| 1/4 cup olive oil, plus 1 tablespoon |
| Salt, to taste |
| Pepper, to taste |
| Fresh chopped herbs such as Italian parsley, tarragon or chives, optional |
Directions:
- Heat 2 tablespoons olive oil in small saucepan on medium-high heat. Add onion and cook 2 minutes. Then add cranberries and juice, bring to a boil, and simmer 15 minutes. Remove and add to food processor. Blend until semi-smooth.
- Place in mixing bowl and add vinegar, honey, 1/4 cup and 1 tablespoon olive oil, horseradish, salt & pepper. Mix well, season to taste and finish with fresh chopped parsley, tarragon or chives.
