Orzo with Chicken and Feta

Serves 8


Ingredients:

3/4 cup uncooked Orzo Pasta, (Easily can go up to one cup for additional pasta)
1 lb. Boneless Skinless Chicken Breasts, cut into 1 inch pieces
1 medium Cucumber or English Cucumber, chopped small pieces
1 Red Onion, Chopped Small
1/4 cup minced fresh Parsley
2 tablespoons Fresh Lemon Juice
1 tablespoon Extra VirginOlive Oil
1 teaspoon Salt
1/4 teaspoon Pepper
1/4 cup Crumbled Feta Cheese, (Easily can go up to 1/2 cup for more Feta flavor)

Directions:

  1. Cook pasta according to package. While pasta is cooking, In a frying pan add a small amount of Olive Oil and/or Cooking Spray, whichever you prefer. Cook the chicken cubes over medium heat for 6 to 8 minutes or until completely cooked through to 165 degrees F.
  2. While the chicken and pasta are cooking, in a large bowl for mixing and serving combine the cucumber, onion and parsley. In a small bowl, mix the lemon juice, Olive Oil, Salt and Pepper - whisk well together.
  3. Then add to the mixing/serving bowl the chicken, sauce mixture and feta. Drain the pasta and add to the mixture and stir together. Add more feta if you desire at time of serving.
  4. Can be served warm or cold, delicious both ways.
