Orzo with Chicken and Feta





Serves 8
Ingredients:
| 3/4 cup uncooked Orzo Pasta, (Easily can go up to one cup for additional pasta) |
| 1 lb. Boneless Skinless Chicken Breasts, cut into 1 inch pieces |
| 1 medium Cucumber or English Cucumber, chopped small pieces |
| 1 Red Onion, Chopped Small |
| 1/4 cup minced fresh Parsley |
| 2 tablespoons Fresh Lemon Juice |
| 1 tablespoon Extra VirginOlive Oil |
| 1 teaspoon Salt |
| 1/4 teaspoon Pepper |
| 1/4 cup Crumbled Feta Cheese, (Easily can go up to 1/2 cup for more Feta flavor) |
Directions:
- Cook pasta according to package. While pasta is cooking, In a frying pan add a small amount of Olive Oil and/or Cooking Spray, whichever you prefer. Cook the chicken cubes over medium heat for 6 to 8 minutes or until completely cooked through to 165 degrees F.
- While the chicken and pasta are cooking, in a large bowl for mixing and serving combine the cucumber, onion and parsley. In a small bowl, mix the lemon juice, Olive Oil, Salt and Pepper - whisk well together.
- Then add to the mixing/serving bowl the chicken, sauce mixture and feta. Drain the pasta and add to the mixture and stir together. Add more feta if you desire at time of serving.
- Can be served warm or cold, delicious both ways.
