Tuscan Cheddar and Spinach Burgers





Serves 8
Ingredients:
| 1 lb. fresh spinach |
| 2 lb. lean ground beef |
| 1/2 cup dry breadcrumbs |
| 2 oz Cabot Hand Rubbed Tuscan Cheddar, grated leaving 8 slices for top of each burger |
| 1/8 teaspoon salt |
| 1/8 teaspoon pepper |
| 1 clove garlic, minced |
| 1 tablespoons balsamic vinegar |
Directions:
- Put spinach in large bowl and cover with plate or plastic wrap; microwave for several minutes or just until wilted. Let cool and chop.
- Combine spinach with remaining ingredients. Shape into 8 burgers.
- Grill to desired degree of doneness, then top with sliced cheese and cover until melted. Serve on buns if desires.
