Rock 'N' Roll Chicken Sandwiches

Serves 6


Ingredients:

1 1/4 cup bottled BBQ sauce, or more, to taste
6 butter-toasted buns
2 cups prepared coleslaw, for topping
Salt, to taste
Pepper, to taste

Directions:

  1. Pull chicken, using gloved hands, removing and discarding skin and bones. Use your fingers to break chicken meat into smaller shreds and pieces.
  2. In large skillet, mix together the pulled chicken and BBQ sauce and heat over medium heat. Cook until heated through, about 5 to 8 minutes. Season, to taste, with salt and freshly ground pepper.
  3. Serve on butter-toasted buns topped with coleslaw.
