1 Savu Smoking Bag, (Available at the Chef Counter inside Festival Foods)
Olive oil
18 oz bottle Sweet Baby Ray's Original BBQ Sauce
Salt, to taste
Pepper, to taste
Soft butter, for buttering buns
6 large sandwich buns, toasted on grill with butter
Olive oil cooking spray, for bag
Directions:
Rub all sides of pork with olive oil and then sprinkle the rib rub evenly all over pork, pressing lightly so seasoning sticks to the meat. Open smoking bag according to package directions and spray the interior evenly with cooking spray. Place seasoned pork inside bag and close. Follow cooking directions for grill on bag carefully. When pork is cooked, allow to sit in bag off heat for at least 10 minutes before opening bag. Be extremely careful as the steam that escapes as you open the bag is very hot!
Let pork cool completely and using gloved hands, pull and shred the pork discarding any bones or excess fat and place in a large sauce or sauté pan. Make sure you add any juices that have accumulated in smoker bag to the pan with shredded pork. Add bottle of BBQ sauce, tossing to mix sauce and pork together evenly. Heat saucepan or sauté pan over medium heat and stir pork and BBQ sauce mixture until heated through. Season to taste with salt and pepper and serve on butter toasted buns.
