Dijon Glazed Salmon

Serves 4


Ingredients:

1/3 cup olive oil
1 teaspoon minced garlic
1/4 cup ketchup
1 tablespoon fresh lemon juice
4 tablespoons Soy Sauce
2 tablespoons Dijon Mustard
1/2 teaspoon Worcestershire sauce
4 Salmon filets, (6-8 oz.)
Cooking spray
Salt, to taste
Pepper, to taste

Directions:

  1. Mix all marinade/glaze ingredients together in small saucepan over medium heat. Bring to a low boil, remove from heat; cool completely.
  2. For the salmon, spray a 9x13-inch baking pan with cooking spray and place salmon filets skin-side down in pan. Sprinkle evenly with salt and pepper and spread cooled marinade/glaze evenly over the top. Cover and place in fridge to marinate 2 to 8 hours.
  3. Preheat oven to 400 degrees F. Uncover fish and bake for 20 minutes. Salmon should be nicely caramelized on top and just cooked through.
  4. The minimum temperature of the salmon in the thickest part should be 135 degrees. Or more done to your preference.
