Dijon Glazed Salmon





Serves 4
Ingredients:
| 1/3 cup olive oil |
| 1 teaspoon minced garlic |
| 1/4 cup ketchup |
| 1 tablespoon fresh lemon juice |
| 4 tablespoons Soy Sauce |
| 2 tablespoons Dijon Mustard |
| 1/2 teaspoon Worcestershire sauce |
| 4 Salmon filets, (6-8 oz.) |
| Cooking spray |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Mix all marinade/glaze ingredients together in small saucepan over medium heat. Bring to a low boil, remove from heat; cool completely.
- For the salmon, spray a 9x13-inch baking pan with cooking spray and place salmon filets skin-side down in pan. Sprinkle evenly with salt and pepper and spread cooled marinade/glaze evenly over the top. Cover and place in fridge to marinate 2 to 8 hours.
- Preheat oven to 400 degrees F. Uncover fish and bake for 20 minutes. Salmon should be nicely caramelized on top and just cooked through.
- The minimum temperature of the salmon in the thickest part should be 135 degrees. Or more done to your preference.
