1 stick Salted Butter, softened and cut into Tablespoon size pieces
1/2 lb Our Own Smokehouse Bacon, cooked and roughly chopped
3 Green Onions, cleaned and sliced using the white and green Portions
French Fried Onions for Topping
3/4 cup Sour Cream
1 cup shredded Pepperjack Cheese
1/2 teaspoon Seasoned Salt (or more to taste)
1/4 teaspoon freshly Ground Black Pepper to taste
1/2 cup French Fried Onions
Green onions, cleaned and sliced for garnish
Directions:
Bake potatoes in preheated oven at 350 degrees F until fork-tender (approximately 1 hour).
Remove from oven.
Place potatoes in a large bowl and smash with a potato masher.
Immediately add softened butter, green onions, bacon, sour cream, shredded cheese and stir with a rubber spatula. Add salt and pepper. If you are serving right away, sprinkle on extra French fried onions and sliced green onions.
If you want to hold and serve, put potatoes in an oven ready baking and serving dish. Hold in 350 degrees F oven for 20 minutes. Before serving, sprinkle top with extra French fried onions and sliced green onions.
