Macaroni and Cheese MontAmoré

Ingredients:
2 cups whole milk
2 cups Half and Half
2 cups shredded cheddar cheese
1 1/2 teaspoons white pepper
2 tablespoons corn starch
1/4 cup whole milk
8 oz elbow macaroni, uncooked
2 1/2 cups Sartori® MontAmoré® cheese, small crumbles
Directions:
Preheat oven to 350 degrees F. Cook pasta according to package directions.
In a medium saucepan bring the milk and Half and Half to just below a simmer, about 185 degrees F. Add cheeses, white pepper, and salt; whisking continuously. Bring to a simmer.
In a separate small bowl combine starch and 1/4 cup milk. Add 1/4 cup of cheese mixture into starch mixture. Add starch mixture into saucepan of cheese sauce.
Combine pasta and cheese mixture. Pour into casserole dish. Bake 15 minutes. Let sit a few minutes before serving.
Optional: Sprinkle additional MontAmoré on top and melt.
