Cheddar, Pistachio and Cranberry Pops

Serves 24


Ingredients:

8 oz Cabot Sharp or Extra Sharp Cheddar Cheese grated, (about 2 cups)
1/2 cup Plain Greek Style Yogurt
1/2 cup finely chopped pistachios
1/2 cup finely chopped dried cranberries
24 short pieces fresh rosemary, (optional)

Directions:

  1. In medium bowl, mix together the grated cheese and enough yogurt using a fork, and making the mixture hold together well; shape into about 2 dozen (1 inch) balls.
  2. In another bowl, mix together pistachios and cranberries.
  3. Roll each ball in mixture pressing firmly to coat. Cover and refrigerate until ready to serve.
  4. Just before serving, insert piece of rosemary in each ball if desired.
