Cheddar, Pistachio and Cranberry Pops





Serves 24
Ingredients:
| 8 oz Cabot Sharp or Extra Sharp Cheddar Cheese grated, (about 2 cups) |
| 1/2 cup Plain Greek Style Yogurt |
| 1/2 cup finely chopped pistachios |
| 1/2 cup finely chopped dried cranberries |
| 24 short pieces fresh rosemary, (optional) |
Directions:
- In medium bowl, mix together the grated cheese and enough yogurt using a fork, and making the mixture hold together well; shape into about 2 dozen (1 inch) balls.
- In another bowl, mix together pistachios and cranberries.
- Roll each ball in mixture pressing firmly to coat. Cover and refrigerate until ready to serve.
- Just before serving, insert piece of rosemary in each ball if desired.
