Deluxe Tuna Salad Sandwiches

Ingredients:
2 can white Albacore tuna in water, (6 oz each)drained
1 rib celery, finely diced
1 teaspoon Spicy Brown or Dijon Mustard, plus more for spreading on bread
1/4 cup finely diced onion
2 teaspoons sweet pickle relish
1/4 teaspoon seasoned salt
1/4 teaspoon Pepper
4 lettuce leaves
Prepared Tuna Salad
4 thin slices red onion
8 thin slices tomato
8 slices Taste of Scandinavia Oatmeal Flaxseed Bread
Directions:
Using a fork, mix together all the Tuna Salad ingredients. Refrigerate, covered, until ready to use.
To assemble sandwich: Spread one side of each piece of Oatmeal Flaxseed Bread with mayonnaise and spicy brown or Dijon mustard, to taste. Place one lettuce leaf each on 4 slices of bread.
Divide tuna salad into 4 equal portions and spread on top of lettuce. Top each with 1 slice of red onion and 2 slices of tomato. Close together with top piece of bread, cut in half, diagonally, and serve.
