Ingredients:
2 1/2 cups cooked chicken, diced and chilled
1 cup finely chopped celery
2 tablespoons finely chopped onion
1 cup sliced, seedless red or green grapes
1/2 cup slivered almonds, toasted
2 tablespoons chopped fresh parsley
1 teaspoon seasoned salt
1/4 teaspoon freshly ground pepper
4 lettuce leaves
Prepared Chicken Salad
8 slices Taste of Scandinavia Multi-Grain Bread
Directions:
In a medium bowl, combine all chicken salad ingredients. Refrigerate, covered, until ready to use.
Place 4 lettuce leaves on 4 slices of the Multi-Grain Bread. Divide chicken salad into 4 equal portions and spread over lettuce. Close together with top slice of Multi-Grain bread.
