Wild Rice Meatloaf





Serves 4 to 6
Ingredients:
| 2 pounds Our Own Mom's Meatloaf, uncooked |
| 1/4 cup Sweet Baby Ray's Hickory and Brown Sugar BBQ Sauce |
| 1/2 cup cooked wild rice |
| 1 medium shallot, (1/4 cup)chopped |
| 1 teaspoon minced fresh garlic |
| 1 cup chopped sweet red bell pepper |
| 3 slices raw Smoked bacon, finely chopped |
Directions:
- Preheat oven to 375 degrees F. Grease 2 lb loaf pan; place on sheet pan and set aside. In a large bowl, mix together meatloaf, cooked wild rice, shallots, garlic, sweet red bell pepper, and BBQ sauce. Shape into loaf and place into prepared pan.
- Sprinkle top of meatloaf evenly with finely chopped raw bacon. Bake for about 1 hour or until center of meatloaf registers 165 degrees F. Let rest 10 minutes before slicing.
