1/2 Cup Crumbled Blue Cheese, plus more for topping
1/2 White Onion, diced
1/2 Cup Milk
1/2 Cup Frank's Hot Sauce, plus more for topping
1 Large Egg
1 Tsp Salt
1/2 Tsp Garlic Powder
1/2 Tsp Dried Parsley
1/2 Tsp Dried Dill Weed
1/2 Tsp Black Pepper
Directions:
Preheat the oven to 350 degrees F. Spray a loaf pan with cooking spray.
In a large mixing bowl, combine the ground chicken. Breadcrumbs, celery, blue cheese, and onion. Set aside.
In a separate mixing bowl, combine the milk, hot sauce, egg, salt, garlic powder, parsley, dill, and pepper.
Pour the wet ingredients into the chicken mixture. Mix until well combined.
Pour the mixture into the loaf pan and press into an even layer. Brush the top with additional hot sauce.
Bake, uncovered, for 1 hour or until an internal temperature of 165 degrees F is reached.
Remove from the oven and sprinkle more blue cheese on top. Bake for an additional 5 minutes or until the cheese has melted.
Remove from the oven and let sit for 10 minutes. Slice and serve. Enjoy!
***Alternate option is to line the loaf pan with parchment paper and lift the meatloaf out of the pan once done baking. This will make slicing and serving easier.
***You can substitute the blue cheese for shredded mozzarella cheese, if preferred.
