Ingredients:
| 1 1/2 lbs Ground Chicken |
| 1 Cup Plain Breadcrumbs |
| 2 Celery Ribs, diced |
| 1/2 Cup Crumbled Blue Cheese, plus more for topping |
| 1/2 White Onion, diced |
| 1/2 Cup Milk |
| 1/2 Cup Frank's Hot Sauce, plus more for topping |
| 1 Large Egg |
| 1 Tsp Salt |
| 1/2 Tsp Garlic Powder |
| 1/2 Tsp Dried Parsley |
| 1/2 Tsp Dried Dill Weed |
| 1/2 Tsp Black Pepper |
Directions:
- Preheat the oven to 350 degrees F. Spray a loaf pan with cooking spray.
- In a large mixing bowl, combine the ground chicken. Breadcrumbs, celery, blue cheese, and onion. Set aside.
- In a separate mixing bowl, combine the milk, hot sauce, egg, salt, garlic powder, parsley, dill, and pepper.
- Pour the wet ingredients into the chicken mixture. Mix until well combined.
- Pour the mixture into the loaf pan and press into an even layer. Brush the top with additional hot sauce.
- Bake, uncovered, for 1 hour or until an internal temperature of 165 degrees F is reached.
- Remove from the oven and sprinkle more blue cheese on top. Bake for an additional 5 minutes or until the cheese has melted.
- Remove from the oven and let sit for 10 minutes. Slice and serve. Enjoy!
- ***Alternate option is to line the loaf pan with parchment paper and lift the meatloaf out of the pan once done baking. This will make slicing and serving easier.
- ***You can substitute the blue cheese for shredded mozzarella cheese, if preferred.
