1/4 cup Sweet Baby Ray's Hickory and Brown Sugar BBQ Sauce
1/2 cup cooked wild rice
1 medium shallot, (1/4 cup)chopped
1 teaspoon minced fresh garlic
1 cup chopped sweet red bell pepper
3 slices raw Smoked bacon, finely chopped
Directions:
Preheat oven to 375 degrees F. Grease 2 lb loaf pan; place on sheet pan and set aside. In a large bowl, mix together meatloaf, cooked wild rice, shallots, garlic, sweet red bell pepper, and BBQ sauce. Shape into loaf and place into prepared pan.
Sprinkle top of meatloaf evenly with finely chopped raw bacon. Bake for about 1 hour or until center of meatloaf registers 165 degrees F. Let rest 10 minutes before slicing.
