Chicken Enchilada Bake

Ingredients:
4 1/2 cups cubed cooked chicken or 1 lb. browned ground chicken or turkey 1 package chicken taco seasoning 2 cans green enchilada sauce or equivalent mild green salsa, (15 oz.) 1 can Healthy Request Cream of Chicken soup, (10.75 oz.) 1 cup sour cream 10 corn tortillas, cut into 1 1/2 inch pieces 4 cups shredded Monterey or Pepper Jack Cheese
Directions: Preheat oven to 375 degrees F. Coat a 9x13-inch baking pan with cooking spray; set aside. In a large bowl, toss together the cooked chicken and chicken taco seasoning. In a separate bowl, whisk together the cream of chicken soup and sour cream. In prepared baking pan, layer half of the chicken, green enchilada sauce or salsa, soup and sour cream mixture, tortillas, and cheese. Repeat layers. Cover and bake for 40 minutes; uncover and bake 10 minutes longer or until bubbly. Let stand 15 minutes before serving.
