Chicken Enchilada Bake





Serves 8
Ingredients:
| 4 1/2 cups cubed cooked chicken or 1 lb. browned ground chicken or turkey |
| 1 package chicken taco seasoning |
| 2 cans green enchilada sauce or equivalent mild green salsa, (15 oz.) |
| 1 can Healthy Request Cream of Chicken soup, (10.75 oz.) |
| 1 cup sour cream |
| 10 corn tortillas, cut into 1 1/2 inch pieces |
| 4 cups shredded Monterey or Pepper Jack Cheese |
Directions:
- Preheat oven to 375 degrees F. Coat a 9x13-inch baking pan with cooking spray; set aside.
- In a large bowl, toss together the cooked chicken and chicken taco seasoning.
- In a separate bowl, whisk together the cream of chicken soup and sour cream.
- In prepared baking pan, layer half of the chicken, green enchilada sauce or salsa, soup and sour cream mixture, tortillas, and cheese. Repeat layers.
- Cover and bake for 40 minutes; uncover and bake 10 minutes longer or until bubbly. Let stand 15 minutes before serving.
