Saint Andre Red Grapes and Cashew Salad





Serves 1
Ingredients:

12 oz St. André cheese+ Add to Shopping List |
8 oz seedless red grapes+ Add to Shopping List |
1 oz fresh tarragon chopped+ Add to Shopping List |
1 baguette, (sliced and toasted)+ Add to Shopping List |
1 tablespoon balsamic vinegar+ Add to Shopping List |
1 tablespoon Port wine vinaigrette+ Add to Shopping List |
3 tablespoons roasted cashews+ Add to Shopping List |
- Directions for salad: Slice the red grapes and put in a bowl with chopped tarragon. Add roasted chopped cashews. Mix in the Port wine vinaigrette.
- Plating instruction: Put slices of St. André on the toasted baguette slices, and add some grape salad. For decoration use tarragon, and drizzle some extra Port wine vinaigrette and some of the balsamic vinegar around the plate.

1 cup red wine vinegar+ Add to Shopping List |
1/2 cup port wine+ Add to Shopping List |
4 tablespoons Dijon mustard+ Add to Shopping List |
4 cloves garlic+ Add to Shopping List |
Salt+ Add to Shopping List |
Pepper+ Add to Shopping List |
- Directions for Port wine vinaigrette: Put all ingredients in a blender accept the olive and vegetable oils. Blend until smooth. Then add the vegetable and olive oil and mix well until smooth again. Taste vinaigrette and season.
