Ingredients:
| 1 lb lean ground beef |
| 1 cup shredded sharp cheddar cheese, for topping |
| 1 cup minute brown rice |
| 3/4 cup water |
| 1 jar mild or medium salsa, (24 oz.) |
| 1 can black beans, drained and rinsed |
| 1 can corn, drained |
| Sour cream, for topping, optional |
| Adobo seasoning |
| Freshly ground pepper |
Directions:
- Preheat large skillet over medium-high heat. Brown ground beef and sprinkle with adobo seasoning and pepper. Add rice, water, salsa, beans, and corn. Bring to a boil; reduce heat, cover, and simmer 10 mins. Sprinkle top evenly with shredded cheddar and cover. Let sit 2 mins or until cheese is melted. Serve in bowls topped with sour cream.
- Chef's note: You may add 1 chopped onion and 1 teaspoon of minced garlic to the ground beef if you like.
