Preheat large skillet over medium-high heat. Brown ground beef and sprinkle with adobo seasoning and pepper. Add rice, water, salsa, beans, and corn. Bring to a boil; reduce heat, cover, and simmer 10 mins. Sprinkle top evenly with shredded cheddar and cover. Let sit 2 mins or until cheese is melted. Serve in bowls topped with sour cream.
Chef's note: You may add 1 chopped onion and 1 teaspoon of minced garlic to the ground beef if you like.
