Pork T "Lollypops" with Honey Mustard Dipping Sauce





Serves 4
Ingredients:
| 1 marinated pork tenderloin, (Honey Mustard or Lemon Garlic flavors work well), trimmed and sliced into half-inch medallions |
| 1/2 cup flour seasoned with garlic salt and pepper |
| Egg wash, 2eggs mixed with 1/4 cup milk |
| Italian flavored panko bread crumbs |
| Vegetable oil, for frying |
| Honey mustard dipping sauce, for serving |
| 8 short wooden skewers, for serving |
Directions:
- Dredge medallions in seasoned flour, shake off excess, dip into egg wash, then coat with panko bread crumbs. Preheat large skillet over medium-high heat and fill with a half-inch of vegetable oil.
- When oil is hot, (about 350 degrees F) add half of the prepared pork medallions and fry until golden brown and crispy, about 3 minutes per side. Drain on paper towels, pierce with wooden skewers about halfway through the middle so skewer is not visible.
- Serve Pork T Lollypops with honey mustard dipping sauce on the side.
