Pork T "Lollypops" with Honey Mustard Dipping Sauce

Ingredients:
1 marinated pork tenderloin, (Honey Mustard or Lemon Garlic flavors work well), trimmed and sliced into half-inch medallions
1/2 cup flour seasoned with garlic salt and pepper
Egg wash, 2eggs mixed with 1/4 cup milk
Italian flavored panko bread crumbs
Vegetable oil, for frying
Honey mustard dipping sauce, for serving
8 short wooden skewers, for serving
Directions:
Dredge medallions in seasoned flour, shake off excess, dip into egg wash, then coat with panko bread crumbs. Preheat large skillet over medium-high heat and fill with a half-inch of vegetable oil.
When oil is hot, (about 350 degrees F) add half of the prepared pork medallions and fry until golden brown and crispy, about 3 minutes per side. Drain on paper towels, pierce with wooden skewers about halfway through the middle so skewer is not visible.
Serve Pork T Lollypops with honey mustard dipping sauce on the side.
