Chicken or Turkey Lettuce Wraps





Serves 6
Ingredients:
| 1 lb ground turkey or chicken |
| 1 large onion, finely chopped |
| Salt |
| Freshly ground pepper |
| 2 teaspoon minced fresh garlic |
| 1 tablespoon grated fresh ginger |
| 1 bunch scallions (green onions), sliced thinly |
| 1 cup Asian Peanut Sauce, plus more for topping |
| 1 can diced water chestnuts, (8 oz.)drained |
| 1/4 cup chopped peanuts |
| 10 outer lettuce leaves, rinsed and dried, for serving |
| Crispy Wonton Strips, for topping |
| 2 tablespoons soy sauce |
Directions:
- Preheat a large nonstick skillet over medium-high heat. Add ground turkey or chicken, onion, and sprinkle with salt and pepper.
- Cook until turkey is no longer pink, breaking up pieces with large spoon. Stir in soy sauce, garlic and ginger and cook 2 minutes longer.
- Stir in prepared Asian peanut sauce and heat through, about 3 minutes.
- Stir in scallions, water chestnuts, and peanuts and cook until just heated through, about 2 minutes more.
- Serve spoonfuls of turkey mixture in lettuce leaves. Top with more peanut sauce and crunchy wonton strips, if desired.
