Curry-Fig Grilled Pork Tenderloin

Ingredients:
1 Plain Pork Tenderloin
8 oz jar Salad Girl Curry Fig Salad Dressing, divided use
Olive oil
1/2 cup dried apricots, diced, for topping
Salt, to taste
Pepper, to taste
Directions:
Preheat grill to medium-high heat.
Rub pork tenderloin all over with olive oil and sprinkle with salt and pepper. Grill tenderloin on all sides until browned and internal temperature reaches 150 degrees F.
Brush about 1/4 cup of the Curry Fig dressing all over the tenderloin and grill another 5 minutes. Remove to platter, cover, and rest 5 minutes.
While tenderloin is grilling, heat a small saucepan over medium heat and add 3/4 cup of the curry fig salad dressing to the pan. Heat 5 minutes; cover and keep warm.
Slice tenderloin into 1/4 inch round slices, fan out onto serving plates and drizzle with more of the warmed curry fig salad dressing and sprinkle diced dried apricots on top.
