Triple Chocolate Macadamia Nut Cookies





Serves 4 dozen
Ingredients:
| 4 1/4 cups all-purpose flour |
| 1/2 cup Dutch cocoa |
| 2 teaspoons baking soda |
| 1 teaspoon salt |
| 2 cups unsalted butter, softened |
| 1 cup sugar |
| 1 1/3 cups dark brown sugar |
| 3 large eggs |
| 1 tablespoon vanilla extract |
| 1 package white chocolate chips, (12 oz.) |
| 1 package semi-sweet or bittersweet chocolate chips, (12 oz.) |
| 1 cup chopped Macadamia nuts |
Directions:
- Preheat oven to 350 degrees F. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
- Using an electric stand or hand mixer, beat butter until creamy. Add both sugars and beat on medium speed until light and fluffy. Add 1 egg at a time, scraping down bowl as needed.
- Add vanilla and mix on medium speed to incorporate. Add flour mixture slowly with mixer on low speed until almost incorporated. Add both chocolate chips and macadamia nuts and mix just to incorporate.
- Use a cookie scoop to place dough on parchment-lined cookie sheet, spacing 2-inches apart. Bake 10 to 12 minutes or until crisp on the outside and still a little soft on the inside.
