Apple Cider-Onion Glazed Pork Roast





Serves 8
Ingredients:
| Glaze: |
| 2 tablespoons butter |
| 1 cup sweet yellow onion, finely diced |
| 1 clove large garlic, pressed or minced |
| 1 tablespoon brown sugar |
| 2 large sweet yellow onions, peeled and cut into wedges |
| 1 cup sweet apple cider |
| 1/4 cup honey |
| 1 teaspoon apple cider vinegar |
| 1/2 teaspoon each ground ginger and |
| 1 tablespoon Dijon mustard |
| 1/2 teaspoon dry mustard |
| 4 lb. pork shoulder or loin roast |
| Olive oil |
| Garlic salt, to taste |
| Fresh ground pepper, to taste |
Directions:
- Glaze: Preheat medium saucepan over medium-high heat. Whisk together all ingredients and bring to a boil over high heat. Reduce to glaze-like consistency, about 15 minutes. Remove from heat; season to taste, with garlic salt and pepper. Glaze can be made and refrigerated, covered, up to 3 days in advance.
- Roast: Preheat oven to 325 degrees F. Rub roast all over with olive oil and sprinkle with pork rub. Place roast in a shallow roasting pan; surround with onion wedges. Brush roast with about a third of the cider glaze; cover.
- Begin roasting pork and brush with another third of the cider glaze after 1 1/4 hours of roasting time, cover again. Brush with remaining glaze 1 hour later and roast another 15 to 20 minutes, uncovered. Cut roast into chunks and season, to taste, with garlic salt and pepper before serving.
