Mustard-Crusted Sirloin Tip Roast

Ingredients:
3 lb. sirloin tip roast
Roast Rub or Montreal Steak Seasoning
6 cloves garlic, peeled and cut in half
Country-style Dijon mustard
1 dry package au jus mix
1 large sweet yellow onion, diced
1 can can beer or non-alcoholic beer, (12 oz.)
3 bay leaves
Sea salt, to taste
Pepper, to taste
Directions:
Sprinkle roast all over with roast rub. Cut 12 small deep slits evenly all over roast; insert garlic slivers. Rub roast all over with the country-style Dijon mustard.
Place prepared roast in slow cooker; sprinkle top with au jus mix and onions; pour beer over the top, and add bay leaves. Cook 4 hours on high or 8 hours on low. Season, to taste, with salt and pepper.
Serve roast with the au jus from the slow cooker and more mustard on the side.
