Mustard-Crusted Sirloin Tip Roast





Serves 6
Ingredients:
| 3 lb. sirloin tip roast |
| Roast Rub or Montreal Steak Seasoning |
| 6 cloves garlic, peeled and cut in half |
| Country-style Dijon mustard |
| 1 dry package au jus mix |
| 1 large sweet yellow onion, diced |
| 1 can can beer or non-alcoholic beer, (12 oz.) |
| 3 bay leaves |
| Sea salt, to taste |
| Pepper, to taste |
Directions:
- Sprinkle roast all over with roast rub. Cut 12 small deep slits evenly all over roast; insert garlic slivers. Rub roast all over with the country-style Dijon mustard.
- Place prepared roast in slow cooker; sprinkle top with au jus mix and onions; pour beer over the top, and add bay leaves. Cook 4 hours on high or 8 hours on low. Season, to taste, with salt and pepper.
- Serve roast with the au jus from the slow cooker and more mustard on the side.
