Grilled Chipotle Lime Chicken





Serves 4
Ingredients:
| 4 boneless skinless chicken breasts |
| Olive oil |
| Southwest seasoning |
| 2 chipotle chilies in adobo sauce, minced, plus 1 tablespoon adobo sauce |
| 4 tablespoons fresh lime juice |
| 2 cloves garlic, minced |
| 1/2 cup olive oil |
| 2 tablespoons honey |
| Sea salt |
| Freshly ground pepper |
Directions:
- Rub chicken breasts all over with olive oil and sprinkle with southwest seasoning on both sides. In a small bowl, whisk together chipotles in adobo and sauce, lime juice, garlic, and olive oil and divide marinade in half. Pour half into re-sealable bag and add seasoned chicken breasts. Place in fridge and allow to marinate 20 minutes.
- Preheat grill to medium-high heat. Whisk honey into reserved marinade; set aside. Remove chicken from marinade and place on preheated grill. Discard used marinade. Grill chicken about 4-5 minutes then flip over and cook another 4-5 minutes. Baste chicken with the honey-marinade mixture on both sides as you grill it, about 2 more minutes on each side until browned. Pour any remaining honey sauce over chicken and serve hot.
