8 oz. sliced baby bella (cremini) or white mushrooms
1 large shallot, finely diced
1/2 teaspoon dried thyme
2 tablespoons butter
1 tablespoon olive oil
3 tablespoons flour
1 cup dry red wine
2 cups beef broth
Sea salt, to taste
Freshly ground pepper, to taste
Directions:
Sauté mushrooms, shallots, and dry thyme in butter and oil for 3 to 5 minutes, stirring occasionally. Sprinkle in the flour; stir and cook about 2 minutes. Add red wine and beef broth; bring to a boil. Simmer to reduce a bit, about 5 minutes. Add salt and pepper to taste. If sauce is too thick, add a little more beef broth or red wine. Serve with Beef Pasties or other beef dishes.
