Red Wine Mushroom Sauce





Serves 2 cups
Ingredients:
| 8 oz. sliced baby bella (cremini) or white mushrooms |
| 1 large shallot, finely diced |
| 1/2 teaspoon dried thyme |
| 2 tablespoons butter |
| 1 tablespoon olive oil |
| 3 tablespoons flour |
| 1 cup dry red wine |
| 2 cups beef broth |
| Sea salt, to taste |
| Freshly ground pepper, to taste |
Directions:
- Sauté mushrooms, shallots, and dry thyme in butter and oil for 3 to 5 minutes, stirring occasionally. Sprinkle in the flour; stir and cook about 2 minutes. Add red wine and beef broth; bring to a boil. Simmer to reduce a bit, about 5 minutes. Add salt and pepper to taste. If sauce is too thick, add a little more beef broth or red wine. Serve with Beef Pasties or other beef dishes.
