Italian Stuffed Meatloaf

Ingredients:

Filling ingredients:
1 bag Fresh Baby Spinach, (6 oz.)sautéed in 1 tablespoon olive oil and 1 teaspoon fresh minced garlic
1/2 teaspoon garlic salt
1 cup ricotta cheese
1/2 cup shredded mozzarella
1/2 cup freshly shredded Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon Cracked black pepper
Meatloaf ingredients:
1 lb. Bulk Italian Sausage
1/2 cup shredded Parmesan cheese
1 teaspoon Italian Seasoning
Topping:
1/2 cup Pizza sauce
1/2 cup mozzarella cheese

Directions:

  1. Preheat oven to 350 degrees F. In medium bowl, combine filling ingredients and mix well; set aside.
  2. In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly.
  3. Place meatloaf mixture on waxed paper sprayed with cooking spray and pat into 14 x 10-inch rectangle. Spread filling over meatloaf, leaving 3/4-inch border around edges. Starting at short end, roll up jelly-roll fashion. Press beef mixture over spinach filling at both ends to seal. Place seam side down on rack in open roasting pan.
  4. Bake for 1 hour. Spread pizza sauce over loaf; top loaf with mozzarella cheese.
  5. Return to oven and continue baking 15 minutes. To serve, cut into 1-inch thick slices.
