Country Style Ribs with Sauerkraut Casserole

Ingredients:
2.5-3 lbs country-style ribs
Olive oil
Rib Rub
1 lb. sauerkraut, drained
1 tablespoon brown sugar
1 large sweet yellow onion, chopped
1 large Braeburn apple, shredded
1 bag Simply Hash Browns shredded potatoes, (20 oz)
Sea salt, to taste
12 oz. can or bottle beer or non-alcoholic beer
BBQ Sauce, for glazing
Freshly ground pepper, to taste
Directions:
Preheat oven to 325 degrees F. Spray large roaster or casserole with cooking spray; set aside. Rub ribs all over with olive oil and sprinkle rib rub on both sides. In a large bowl mix together the sauerkraut, brown sugar, onion, shredded apple, hash browns, and salt and pepper.
Spread the sauerkraut mixture evenly over the bottom of the roaster and top with the prepared ribs. Pour beer all over the top.
Cover and roast for 2 1/2 hours. Remove cover and raise oven temperature to 400 degrees F. Brush the tops of the ribs with BBQ sauce and roast another 15 minutes. Turn ribs over, brush with BBQ sauce and roast another 15 minutes. Serve each person a rib with some of the sauerkraut casserole on the side.
