Sausage and Sauerkraut Soup

Ingredients:
1 lb kielbasa or Polish sausage, sliced 1/4-inch thick and quartered 2 tablespoons butter 1 large yellow onion, finely diced 2 ribs celery, finely diced 1 tablespoon brown sugar 14 oz. sauerkraut, rinsed and well drained 1 teaspoon sweet paprika 4 cups low sodium chicken broth 12 oz. beer or non-alcoholic beer 2 cups apple cider 1 package Simply Potatoes Shredded Hash Browns Sea salt Freshly ground pepper, to taste 1 teaspoon caraway seed 1 teaspoon dill weed
Directions: Preheat a large Dutch oven or soup pot over medium-high heat. Add sausage and sauté until lightly browned, about 5 minutes. Add butter, onions, celery, and brown sugar and cook 5 more minutes. Add sauerkraut and all spices and stir until heated through, another 5 minutes. Add the rest of the ingredients and bring to a boil. Reduce heat to medium-low and simmer 20 minutes, covered.
