Berries and Cream Fruit Pizza

Ingredients:
1 package refrigerated sugar cookie dough
Cooking spray
8 oz cream cheese, at room temperature
1/4 cup sugar
1 tablespoon fresh lemon juice
1 cup fresh blueberries, washed and dried
1 cup fresh raspberries, washed and dried
1 cup fresh pineapple, cut into small pieces, pat dry with paper towels
1/2 cup apricot preserves or apple jelly, warmed in microwave
Directions:
Preheat oven to 350 degrees F. Spray a 9 x 13 inch cake pan with cooking spray and pat sugar cookie dough all over bottom evenly. Bake until lightly browned, about 15 minutes. Set aside to cool.
In a medium bowl, mix together the softened cream cheese, sugar, and lemon juice. Spread the cream cheese mixture over cooled cookie crust. Top with the fresh berries and pineapple and drizzle with warm apricot preserves or apple jelly. Refrigerate at least 30 minutes before cutting into squares and serving.
