Brush outside of tortillas with olive oil. Fold tortillas in half then open so you can fill them. Brush half of bottom side of tortillas lightly with BBQ sauce and sprinkle with a thin layer of cheese, chicken mixture, and sprinkle with another light layer of cheese.
Fold tortilla in half and press down lightly on filling. Grill until brown and crispy on both sides, about 3 minutes per side. Repeat with remaining ingredients. Cut into wedges to serve.
