Ingredients:
| 2 Boneless Skinless Chicken Breasts |
| 2 Tsp Italian Seasoning |
| 2 Tsp Garlic, minced |
| Salt, to taste |
| 1 Tbsp Olive Oil |
| 4 Roma Tomatoes, chopped |
| 1/4 Red Onion, finely chopped |
| 3 Tbsp Fresh Basil, finely chopped |
| 1 Tbsp Olive Oil |
| 1/2 Cup Parmesan Chesse, shaved |
| Balsamic Vinegar |
Directions:
- Season chicken with Italian seasoning, garlic, and salt. Heat oil in a skillet and cook chicken, about 8 min per side, until cooked through.
- Combine the tomatoes, red onion, basil, and olive oil in a bowl. Season with salt.
- Top each chicken breast with the tomato mixture and parmesan cheese. Drizzle with balsamic vinegar.
