Bruschetta Chicken

Ingredients:

2 Boneless Skinless Chicken Breasts
2 Tsp Italian Seasoning
2 Tsp Garlic, minced
Salt, to taste
1 Tbsp Olive Oil
4 Roma Tomatoes, chopped
1/4 Red Onion, finely chopped
3 Tbsp Fresh Basil, finely chopped
1 Tbsp Olive Oil
1/2 Cup Parmesan Chesse, shaved
Balsamic Vinegar

Directions:

  1. Season chicken with Italian seasoning, garlic, and salt. Heat oil in a skillet and cook chicken, about 8 min per side, until cooked through.
  2. Combine the tomatoes, red onion, basil, and olive oil in a bowl. Season with salt.
  3. Top each chicken breast with the tomato mixture and parmesan cheese. Drizzle with balsamic vinegar.
