Chicken Gyros with Tzatziki Sauce

Ingredients:
1 lb Boneless Skinless Chicken Breasts
1 Tbsp Paprika
1 Tsp Dried Oregano
2 Cloves Garlic, minced
Olive Oil
Salt and Pepper
4 Pieces Pita Bread
Tomato, sliced
Red Onion, sliced
Crumbled Feta, optional, for topping
Preheat oven to 375 degrees.
Place the chicken in a small baking dish. Drizzle with olive oil and use your hands to run the olive oil over both sides of the chicken. Sprinkle the chicken with the garlic, paprika, and oregano. Use your hand to rub the seasoning over both sides of the chicken.
Bake for 30 minutes or until the chicken is cooked through (internal temperature of 165 degrees).
Remove the chicken and slice into strips.
In a small mixing bowl, add the yogurt, cucumber, garlic, dill, vinegar, and 2 Tbsp olive oil. Mix until well combined. **Grate the cucumber if possible. Otherwise, remove the seeds and chop into very small pieces.
Heat a few drops of olive oil in a skillet over medium heat. Add a piece of pita bread and cook for 2 minutes, then flip and cook the other side. Repeat with each piece of pita bread.
To the pita bread, add sliced tomato, sliced onion, sliced chicken, and 1-2 Tbsp Tzatziki sauce. Fold in half and serve.
Optional: add crumbled feta to each gyro before serving.
