Mini Homemade Chocolate Chip Cookie Cereal

Ingredients:
2 Cups Almond Flour
1 Tsp Baking Powder
1 Tsp Salt
1/4 Cup Mini Chocolate Chips
1 Tsp Vanilla Extract
1/3 Cup Maple Syrup
1/3 Cup Creamy Almond Butter
Directions:
Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
In a large bowl, whisk together the dry ingredients; almond flour, baking powder, and salt.
Add the vanilla extract, maple syrup, and almond butter to the bowl and stir to combine.
Add the chocolate chips and stir to incorporate.
Place the dough on a piece of parchment paper. Place another piece of parchment paper on top and use a rolling pin to flatten the dough. You want the dough to be about ¼-inch thick.
Use a small cookie cutter that is about ½-inch in size to cut out the mini cookies. Place on the baking sheets, leaving a small amount of space in between each cookie.
You should have enough dough for about 150-200 mini cookies, depending on how much of the dough you use. Once you have cut out the mini cookies, you can form the dough back into a ball and roll it out again to cut out more cookies. You will have less cookies than this if you use a larger cookie cutter.
Bake for 5-6 minutes.
Remove from the oven and let cool completely. Enjoy immediately as cereal with milk, snack on the cookie as is, or store in an airtight container for later use.
