Ingredients:
1 Stick Unsalted Butter
2/3 Cup Light Brown Sugar
3/4 Cup Almond Flour
1/4 Tsp Salt
1 Tbsp Light Corn Syrup
1 Tsp Vanilla Extract
4 oz Chocolate Melting Wafers
Directions:
Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper.
Melt the butter in a medium saucepan over medium heat. Once melted, add the brown sugar, almond flour, salt, and corn syrup. Stir to combine and continue to heat for about 3 minutes until all ingredients are combined.
Turn off the heat and stir in the vanilla. The mixture will look grainy. Let the mixture sit and cool for about 10-15 minutes until it starts to thicken.
Drop teaspoon sized spoonfuls of the mixture onto the baking sheets, spaced 3 inches apart. Bake for 6-7 minutes or until golden brown. The cookies will spread and flatten while they bake.
Let the cookies cool for about 5 minutes then transfer to a cooling rack to cool completely. The cookies will crisp up as they cool.
Add the chocolate wafers to a microwave safe bowl and heat for 30 seconds, then stir, and heat again in 30 second intervals until melted.
Flip over ½ of the cookies. Add small spoonfuls of chocolate to the center of ½ the cookies. Place the other ½ of the cookies on top and gently press down to spread the chocolate to the edges. Let the chocolate harden for about 10 minutes.
