In a medium bowl, add the ground beef OR ground chicken, hot sauce, and Worcestershire sauce. Season with salt and pepper, to taste. Mix until well combined. Portion into 4 equal parts.
Heat a skillet over medium heat and cook the hamburger patties or chicken breasts until cooked through.
Make the Bloody Mary Sauce (see ingredient list below). In a small bowl, add the mayonnaise, bloody mary mix, Worcestershire sauce, lemon juice, vodka, and hot sauce. Mix until well incorporated. Taste and season with salt and pepper, if needed.
Cook the bacon according to package instructions. You want the bacon to be flexible, not crispy. Set aside.
Assemble the burgers. Start with a bun on the bottom. Spread a thin layer of the Bloody Mary Sauce on the bottom of the bun. Add the burger patty. Top with lettuce, sliced tomato, and pickle chip. Add a generous amount of the Bloody Mary Sauce on top so it drips down the sides. Place the other half of the bun on top. Repeat this step until all burgers have been assembled.
Assemble the burger “toppers”. Weave each piece of bacon onto a skewer. Set aside. On separate skewers, stack the following items, adding as much or as little as you like; black olives, cherry tomatoes, pepperoncini, cheese curds, meat stick pieces (slice the meat stick into bite-sized pieces first).
Stick one bacon skewer and one “topping” skewer into each burger. Serve warm with a Bloody Mary on the side. Enjoy!
