Ingredients:
| 1 1/2 - 2 lbs Fresh Salmon Filets |
| Olive Oil |
| 3 Tbsp Cajun Seasoning |
| 2 Large Bell Peppers, sliced |
| 1 Large Yellow Onion, sliced |
| 3-4 Garlic Cloves, finely chopped |
Directions:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Place the salmon (skin side down) on the baking sheet. Drizzle with olive oil and sprinkle with 1-2 Tbsp Cajun seasoning.
- Slice the bell peppers and onion. Finely chop the garlic. Place in a large mixing bowl. Drizzle with olive oil and sprinkle with 1 Tbsp Cajun seasoning. Toss to combine. Pour the veggies around the salmon on the baking sheet.
- Bake for 20-25 minutes or until the internal temperature is 145 degrees F and the salmon flakes apart easily with a fork.
- Serve warm. Enjoy!
