Place the salmon (skin side down) on the baking sheet. Drizzle with olive oil and sprinkle with 1-2 Tbsp Cajun seasoning.
Slice the bell peppers and onion. Finely chop the garlic. Place in a large mixing bowl. Drizzle with olive oil and sprinkle with 1 Tbsp Cajun seasoning. Toss to combine. Pour the veggies around the salmon on the baking sheet.
Bake for 20-25 minutes or until the internal temperature is 145 degrees F and the salmon flakes apart easily with a fork.
