1/2 Cup BBQ Sauce, any variety, plus more for serving
1 1/2 Cups Shredded Mozzarella Cheese
1 Cup Rotisserie Chicken, cubed or shredded
1/4 Red or White Onion, finely chopped
4 Slices Bacon, cooked and chopped
Fresh Parsley, chopped, for garnish
Directions:
Remove the pizza dough from the tube. Place in a well-oiled bowl and cover with plastic wrap. Allow to come to room temperature and rise for about 1 hour. This will make the dough easier to work with.
Preheat the oven to 400 degrees F. Spray a 10-inch pie pan or skillet with cooking spray. Set aside.
Roll out the pizza dough on a clean surface - use your hands to stretch the dough until it is an 18x10-inch rectangle. Press together any tears or seams.
Spread BBQ sauce over the dough, leaving about ½-inch border around the edges.
Sprinkle 1 ¼ cups mozzarella cheese evenly over the BBQ sauce. Add the chicken, onion, and bacon evenly over the cheese.
Starting on the long side (18-inch side), roll the dough away from you until you have one long roll. Pinch the seams together. Cut into 8-10 equal sized pieces. Place in the prepared pie pan or skillet.
Bake for 25-30 minutes or until golden brown and cooked through. Remove from the oven and sprinkle the remaining ¼ cup mozzarella cheese over the top. Return to the oven for 1-2 minutes or until melted.
Sprinkle fresh chopped parsley over the top and serve warm with BBQ sauce on the side for dipping.
